What is your favorite ingredient when it comes to Christmas – and why?
Stefan Gieschke: For me, it’s clearly the baked apple – that typical combination of baked apple spices. This spice blend instantly creates a Christmas atmosphere. The baked apple reminds me of cozy winter evenings, the scent of warm fruit from the oven, childhood, and home. But also oranges – or more precisely, the scent of the inside of a freshly peeled orange peel – add a fresh, slightly tangy note that gives many winter teas a special depth and elegance.
Both ingredients convey the magic of Christmas in very different ways.

How do you prepare in summer to develop and taste Christmas teas?
Stefan Gieschke: It may sound surprising, but in the middle of summer, getting into the Christmas spirit requires imagination above all. We focus, block out the weather outside, and consciously place ourselves in the cold season. It’s a creative process between concentration and daydreaming – almost like a little journey through time. Scent samples, music, or memories help us find the right feeling for the wintry atmosphere.

Where does your inspiration come from, and what makes a good Christmas tea?
Stefan Gieschke: Much of it comes from personal memories and experiences: scents from childhood, classic Christmas pastries, or family moments. But our own creativity and a fine sense for trends also play a role. A good Christmas tea creates a connection – between tradition and innovation, between scent, taste, and emotion. It should warm you, surprise you, and awaken feelings – ideally, bringing a little piece of Christmas into the cup.


What is your favorite ingredient when it comes to Christmas – and why?
Moritz von Riegen: Definitely almond. It brings this wonderfully roasted, sweet aroma that immediately creates a feeling of warmth and coziness – like freshly baked cookies on a winter evening. For me, it’s the perfect symbiosis of flavor and festivity.

How do you prepare in summer to develop and taste Christmas teas?
Moritz von Riegen: As paradoxical as it sounds: our Christmas season begins right in the middle of summer. That’s when we start developing new blends and tasting the first samples. The biggest challenge is staying objective in the heat – because cinnamon, almond & co. taste quite different at 30°C than on a frosty winter day. That’s why we rely on precise aroma balance and a clear idea: the blend must work both in summer and in winter.

Where does your inspiration come from – and what makes a good Christmas tea?
Moritz von Riegen: Clearly: from personal preferences. We experiment a lot, sometimes think outside the box, and keep asking ourselves: what could be a new, surprising perspective on Christmas – without losing its familiar character?
A good Christmas tea strikes that balance: it should awaken memories but also open up new flavor worlds. Not overloaded, but not random either – a tea that smells, tastes, and lingers like Christmas.


What is your favorite ingredient when it comes to Christmas – and why?
Leonie Monske: Without question: cinnamon! It immediately brings Christmas vibes – warm, spicy, and familiar. No other spice is as strongly associated with cookies, punch, and cozy winter days.

How do you prepare in summer to develop and taste Christmas teas?
Leonie Monske: In summer, we love to draw inspiration from seasonal highlights. Ripe berries, fresh herbs, or exotic fruits often spark exciting ideas for new winter teas. Some of these ingredients – in dried form or as flavorings – eventually find their way into our Christmas blends. We also gather inspiration at markets or in gastronomy: what excites people right now? Which flavors are trending? We then connect these impressions with classic winter spices like cinnamon – creating unique, modern Christmas teas.

Where does your inspiration come from, and what makes a good Christmas tea?
Leonie Monske: Often, we start with a brainstorming session as a team – because everyone associates something different with Christmas: childhood memories, scents, colors, or specific flavor combinations. This diversity helps us develop new ideas. The most important thing for us is always: the tea must trigger that special Christmas feeling – warmth, comfort, and anticipation. When that happens, it’s a good Christmas tea. Cinnamon almost always plays a central role in this.


What is your favorite ingredient when it comes to Christmas – and why?
Stefan Zorn: My favorite Christmas ingredient is clearly the orange. My earliest memories of oranges were actually rather disappointing. The green, hard ones that were almost impossible to peel, with very firm flesh, hardly any juice, and so full of seeds that you could plant a whole new orchard with just three fruits – in East Germany, they were lovingly called “Fidel’s Revenge.” Back then, these oranges came from Cuba. Around Christmas, they occasionally appeared in HO shops. But when we sat as children in front of the burning candles of the Christmas pyramid and pressed the peels into the flames, they released a wonderful fragrance, and suddenly it felt like Christmas.

How do you prepare in summer to develop and taste Christmas teas?
Stefan Zorn: I actually have to ease myself into the taste first. Once you’ve tried the first Christmas teas, the feeling and sense for the wintry aromas slowly develop. A cautious “tasting yourself into the mood” probably describes it best.

Where does your inspiration come from, and what makes a good Christmas tea?
Stefan Zorn: Inspiration and ideas for Christmas teas arise throughout the year. Different impressions from Christmas pastries, sweets, and warm spiced drinks provide the first impulses for development. These are collected and then serve as the starting point for new creations. Later, through dozens of tastings, the blends are refined, adjusted, discarded, or confirmed again and again.
A good Christmas tea should clearly reflect at least one of the typical flavors or scents that everyone associates with wintertime. This is then rounded off with different complements and additions of various spices.
